Instructions

  1. Mix graham cracker crumbs, melted butter, and sugar. Press mixture into a tart pan to form the crust. Chill while preparing filling.
  2. Bloom gelatin in water for 5 minutes. Gently heat to dissolve and set aside.
  3. Beat cream cheese until smooth. Add sweetened condensed milk, violet syrup, and food coloring if using. Mix until well combined.
  4. Whip heavy cream in a separate bowl until soft peaks form.
  5. Fold whipped cream into the violet mixture, then stir in the dissolved gelatin.
  6. Pour filling into the chilled crust and smooth the top.
