Ingredients

  • 1 lb boneless, skinless chicken breasts or thighs
  • 4 cups fresh spinach
  • 8 oz mushrooms (cremini or white), sliced
  • 1 tbsp olive oil or butter
  • 2 cloves garlic, minced
  • 1 cup heavy cream or 4 oz cream cheese
  • 1/2 cup grated Parmesan cheese
  • 1/2 cup shredded mozzarella cheese (optional)
  • 1/2 tsp onion powder
  • 1/2 tsp salt
  • 1/4 tsp black pepper
  • 1 tsp Italian seasoning or dried thyme

Instructions

  1. Preheat oven to 375°F (190°C) and grease a baking dish.
  2. Season chicken with salt, pepper, onion powder, and Italian seasoning. Set aside.
  3. In a skillet over medium heat, sauté mushrooms in oil/butter for 5–7 minutes until golden. Add garlic and cook 30 seconds until fragrant.
  4. Add spinach and cook until wilted, then transfer mixture to the baking dish.
  5. Place the seasoned chicken on top of the vegetables.
  6. In the same skillet, whisk together cream (or cream cheese) and Parmesan over low heat until smooth and slightly thickened.
  7. Pour the creamy sauce evenly over the chicken and spinach-mushroom layer.
  8. Optionally, sprinkle mozzarella cheese over the top.
  9. Bake uncovered for 25–30 minutes until chicken reaches 165°F (74°C) and sauce is bubbly.
  10. Let rest for 5 minutes before serving to allow sauce to thicken slightly. Serve warm.
