Ingredients

  • 4 chicken sausages (pre-cooked or raw), sliced into rounds
  • 1 medium zucchini, sliced
  • 1 cup cherry or grape tomatoes, halved
  • 2 garlic cloves, minced
  • 2 tbsp olive oil
  • Salt and black pepper, to taste
  • 1 tsp Italian seasoning or dried oregano
  • 8 oz pasta (penne, rotini, or your choice)
  • Grated Parmesan cheese (optional)
  • Fresh basil or parsley, for garnish

Instructions

  1. Cook pasta in salted water according to package directions. Drain and set aside.
  2. Heat olive oil in a large skillet over medium heat. Add chicken sausage slices and cook until browned and heated through.
  3. Add zucchini to the skillet and cook for 4–5 minutes until tender and lightly golden.
  4. Stir in garlic and cook for 1 minute until fragrant. Add tomatoes and Italian seasoning.
  5. Simmer for a few minutes until tomatoes soften and release juices.
  6. Add cooked pasta to the skillet, toss well, and season with salt and pepper.
  7. Serve hot, topped with grated Parmesan and fresh herbs if desired.
