Ingredients
12 oz fully cooked chicken sausage, sliced
1 cup orzo pasta
2 cups broccoli florets, chopped small
2 cloves garlic, minced
2 tablespoons olive oil
2 1/2 cups chicken broth
1 small onion, diced
1/4 cup grated Parmesan cheese (optional)
1 tablespoon lemon juice (optional)
Salt and black pepper to taste
Optional: pinch of red pepper flakes
Instructions
Heat olive oil in a large skillet over medium heat.
Sauté onion and garlic for 2–3 minutes until softened and fragrant.
Add sliced chicken sausage and cook for 4–5 minutes until lightly browned.
Stir in orzo and toast for 1–2 minutes.
Pour in chicken broth, bring to a simmer, then reduce heat.
Cook for 8–10 minutes, stirring occasionally.
Add chopped broccoli in the last 4–5 minutes of cooking. Cover slightly to steam if needed.
Once orzo is tender and broth is mostly absorbed, stir in Parmesan, lemon juice, salt, pepper, and red pepper flakes if using.
Serve warm, straight from the skillet.
Notes
Use spicy chicken sausage or add sun-dried tomatoes for variation.
Swap broccoli for other veggies like zucchini or spinach.
Add a splash of cream for a richer texture.
To reheat, add a splash of broth or water to loosen the orzo.
To make vegetarian, use plant-based sausage or white beans and veggie broth.
