Ingredients

  • 4 boneless, skinless chicken breasts (pounded to even thickness)
  • Salt and black pepper, to taste
  • 1/2 cup all-purpose flour
  • 2 eggs, beaten
  • 1 cup Italian-style breadcrumbs (or panko)
  • 1/2 cup grated Parmesan cheese
  • 1/4 cup olive oil (or mix with butter)
  • 1 1/2 cups marinara sauce
  • 1 1/2 cups shredded mozzarella cheese
  • Fresh basil or parsley, chopped (for garnish)

Instructions

  1. Preheat oven to 375 °F (190 °C).
  2. Season chicken breasts with salt and pepper.
  3. Set up a breading station with flour, beaten eggs, and breadcrumbs mixed with Parmesan.
  4. Dredge chicken in flour, dip in egg, then coat in breadcrumb mixture.
  5. Heat olive oil in a skillet over medium-high heat and fry chicken until golden-brown, about 3–4 minutes per side.
  6. Transfer chicken to a baking dish and spoon marinara sauce over each piece.
  7. Top with shredded mozzarella and additional Parmesan.
  8. Bake for 15–20 minutes, until cheese is melted and bubbly, and chicken reaches 165 °F.
  9. Garnish with fresh basil or parsley and serve hot.
