Ingredients

  • 4 chicken breasts
  • 1 tablespoon olive oil or butter
  • 2 cloves garlic, minced
  • 1/2 cup chicken broth or white wine
  • 1 package (5.2 oz) Boursin cheese (Garlic & Fine Herbs variety)
  • 1/2 cup heavy cream or half-and-half
  • Salt and pepper to taste

Instructions

  1. Season the chicken breasts with salt and pepper.
  2. Heat olive oil or butter in a skillet over medium-high heat.
  3. Sear chicken breasts for 4–5 minutes per side until golden and cooked through. Remove and set aside.
  4. In the same skillet, add more oil if needed and sauté minced garlic for about 30 seconds until fragrant.
  5. Deglaze the pan with chicken broth or white wine, scraping up any browned bits.
  6. Stir in Boursin cheese and let it begin to melt.
  7. Add heavy cream and simmer gently until the sauce is smooth and slightly thickened.
  8. Return chicken to the skillet, spoon sauce over it, and cook for a few more minutes to meld the flavors.
  9. Taste and adjust seasoning. Garnish with fresh parsley or chives before serving.
