Ingredients

  • 2 cups cooked chicken breast or thighs, sliced or chopped
  • 10 oz short pasta (penne, rotini, or farfalle)
  • 3 cups romaine lettuce, chopped
  • 1 cup cherry tomatoes, halved (optional)
  • 1 cup croutons
  • 1/4 cup grated or shaved Parmesan cheese
  • 1/4 cup mayonnaise
  • 1/4 cup Greek yogurt or sour cream
  • 2 tbsp lemon juice
  • 2 tbsp grated Parmesan
  • 1 clove garlic, minced or 1/2 tsp garlic powder
  • 1 tsp Dijon mustard
  • 1/2 tsp Worcestershire sauce
  • Salt and black pepper to taste

Instructions

  1. Cook pasta until al dente, drain, and rinse under cold water to cool.
  2. Slice cooked chicken and chop romaine lettuce into bite-sized pieces.
  3. In a bowl, whisk together mayonnaise, Greek yogurt, lemon juice, Parmesan, garlic, mustard, Worcestershire sauce, salt, and pepper until smooth.
  4. In a serving bowl, combine pasta, chicken, lettuce, and tomatoes (if using).
  5. Pour the dressing over and toss to coat all ingredients evenly.
  6. Top with croutons and additional Parmesan just before serving.
