Ingredients

  • 20 jumbo pasta shells
  • 2 cups cooked, shredded chicken (rotisserie works great)
  • 1 cup cooked broccoli, finely chopped
  • 2 cups Alfredo sauce (store-bought or homemade)
  • 1 cup ricotta cheese
  • 1 cup shredded mozzarella cheese, divided
  • 1/2 cup grated Parmesan cheese
  • 1/2 teaspoon garlic powder
  • 1 teaspoon Italian seasoning
  • Salt and pepper, to taste
  • Fresh parsley, chopped (optional, for garnish)

Instructions

  1. Preheat oven to 375°F (190°C) and lightly grease a 9×13-inch baking dish.
  2. Cook pasta shells according to package instructions until al dente, then drain, rinse under cold water, and set aside.
  3. In a large bowl, mix shredded chicken, chopped broccoli, ricotta, 1/2 cup mozzarella, Parmesan, garlic powder, Italian seasoning, salt, and pepper.
  4. Spread 1/2 cup Alfredo sauce in the bottom of the baking dish.
  5. Stuff each shell with the chicken–broccoli mixture and place them open-side up in the dish.
  6. Pour remaining Alfredo sauce over the shells and sprinkle with the remaining 1/2 cup mozzarella.
  7. Cover with foil and bake for 25 minutes; remove foil and bake another 10 minutes until cheese is bubbly and golden.
  8. Let cool slightly, then garnish with chopped parsley and serve.
