Ingredients

  • 2 cups cooked chicken breast or thighs, shredded or diced
  • 2 bell peppers, thinly sliced (any color)
  • 1/2 onion, sliced (optional)
  • 1 tbsp olive oil
  • 1/3 cup ranch dressing
  • 1 cup shredded cheese (cheddar, Monterey Jack, or blend)
  • 4 large flour tortillas
  • Salt and black pepper to taste
  • Optional: 1/2 tsp garlic powder, paprika, or chili flakes

Instructions

  1. Heat olive oil in a skillet over medium heat. Sauté bell peppers (and onion, if using) until soft and slightly caramelized.
  2. Add chicken to skillet, season with salt, pepper, and optional spices. Stir until heated through.
  3. Remove from heat and mix in ranch dressing until well coated.
  4. Lay tortillas flat and sprinkle cheese down the center of each.
  5. Spoon chicken and pepper mixture over cheese. Roll into burritos.
  6. Toast burritos in a dry skillet for 2–3 minutes per side until golden and warm.
  7. Serve immediately or wrap for storage.
