Ingredients

6 tablespoons unsalted butter

1 package mini marshmallows

1½ tablespoons cherry-flavored gelatin powder

6 cups crispy rice cereal

6 oz dark chocolate melting wafers or finely chopped dark chocolate

Non-stick cooking spray, for pan

Instructions

1. Prepare the Pan

Lightly spray a 13×9-inch baking pan with non-stick cooking spray. Set aside.

2. Melt Butter and Marshmallows

In a large pot over low heat, melt the butter. Add the mini marshmallows and stir constantly until completely melted and smooth. Remove from heat immediately.

3. Add Flavor and Cereal

Quickly stir in the cherry gelatin powder until fully incorporated and evenly colored. Add the crispy rice cereal and gently fold until all cereal is coated.

4. Press into Pan

Transfer the mixture to the prepared pan. Using lightly dampened or buttered hands, gently press into an even layer—don’t compact too firmly to keep them soft and chewy.

5. Melt Chocolate and Drizzle

Melt the dark chocolate using a double boiler or microwave in 30-second intervals, stirring until smooth. Drizzle over the treats in lines or a zigzag pattern.

6. Set and Slice

Let the treats cool and the chocolate set at room temperature for about 1 hour, or refrigerate for 20–30 minutes. Slice into squares and serve.

Notes

For extra cherry flavor, increase gelatin to 2 tablespoons.

White chocolate works beautifully for a sweeter finish.

Store in an airtight container at room temperature for up to 3 days.
