Ingredients

For the Chicken:

4 chicken breasts

2 teaspoons seasoning salt

1 teaspoon onion powder

1 teaspoon paprika

For the Cheesy Garlic Tomato Sauce:

1 tablespoon avocado oil

1 tablespoon butter

¼ cup yellow onion, finely chopped

2 teaspoons minced garlic

¼ cup dry white wine

1 teaspoon sea salt

1 teaspoon coarse black pepper

1 teaspoon Italian seasoning

2 teaspoons tomato paste

½ cup chicken stock

½ cup fresh cherry tomatoes

1 (14 oz) can crushed tomatoes with basil

3 tablespoons fresh basil leaves, chopped

2 (6 oz) mozzarella balls, torn or sliced

3 tablespoons grated Parmesan cheese

Instructions

Season the chicken: Sprinkle both sides of the chicken breasts with seasoning salt, onion powder, and paprika.

Sear the chicken: In a large skillet, heat avocado oil and butter over medium heat. Add chicken and cook for about 5 minutes per side, or until golden brown and cooked through. Remove and cover with foil.

Sauté aromatics: In the same skillet, add chopped onion and garlic. Sauté for 2 minutes until fragrant.

Deglaze: Pour in the white wine, scraping up any browned bits. Simmer for 2 minutes.

Build the sauce: Stir in salt, pepper, Italian seasoning, and tomato paste. Cook for 1 minute. Add chicken stock, cherry tomatoes, and crushed tomatoes. Bring to a boil, then reduce heat and simmer for 5 minutes.

Add the chicken back: Nestle the chicken into the sauce. Top with fresh basil, mozzarella, black pepper, and Parmesan.

Finish: Simmer for another 5 minutes, until cheese is melted and the chicken is heated through. Serve hot.

Notes

Use fresh mozzarella for best melt and flavor.

Serve with pasta, rice, mashed potatoes, or crusty bread to soak up the sauce.

Substitute chicken thighs if preferred.

For a creamy twist, add a splash of heavy cream before serving.
