Ingredients

  • 1 lb chicken breasts or thighs, diced
  • Salt and pepper to taste
  • 1/2 teaspoon garlic powder
  • 1 tablespoon oil for cooking
  • 1/3 cup mayonnaise
  • 2 tablespoons sriracha or sweet chili sauce (adjust to taste)
  • 1 teaspoon lemon juice or rice vinegar
  • 1 cup shredded cheese (cheddar, mozzarella, or pepper jack)

  • 2 tablespoons butter, for toasting buns
  • Optional: chopped green onions or cilantro for garnish

Instructions

  1. Season diced chicken with salt, pepper, and garlic powder.
  2. Heat oil in a skillet over medium-high heat. Cook chicken until golden and cooked through. Remove from heat.
  3. In a bowl, whisk together mayonnaise, sriracha or sweet chili sauce, and lemon juice or vinegar.
  4. Toss cooked chicken in the dynamite sauce until well coated.
  5. Lightly butter the cut sides of buns and toast in a skillet until golden.
  6. Fill each bun with sauced chicken, sprinkle cheese on top while warm to melt slightly.
  7. Garnish with green onions or cilantro if desired. Close the buns and serve warm.

Notes

  • Swap chicken for crispy shrimp or tofu for variation.
  • Use pepper jack or add extra sriracha for more heat.
  • Add pickled onions, cucumbers, or shredded lettuce for crunch.
  • Garnish with sesame seeds or chopped peanuts for extra texture.
  • Reheat in the oven or skillet for best texture; avoid microwaving.
