Ingredients

  • 10 oz fresh spinach (or 1 package frozen, thawed and drained)
  • 2 tablespoons butter
  • 2 cloves garlic, minced
  • 1 tablespoon all-purpose flour
  • 3/4 cup milk or half-and-half
  • 2 oz cream cheese
  • 1/2 cup shredded mozzarella or cheddar
  • 1/4 cup grated Parmesan

Instructions

  1. In a skillet over medium heat, wilt the fresh spinach with a splash of water. Remove, squeeze out excess liquid, and roughly chop. (Skip this step if using thawed frozen spinach.)
  2. In the same skillet, melt butter and sauté garlic for 1 minute until fragrant.
  3. Whisk in flour and cook for 1 minute to form a roux.
  4. Gradually whisk in milk, stirring constantly until smooth and thickened.
  5. Add cream cheese and stir until melted, then mix in mozzarella and Parmesan until fully melted and combined.
  6. Season with salt, pepper, and nutmeg if using.
  7. Stir in chopped spinach and cook for another 2–3 minutes until creamy and heated through.
