Ingredients

  • 3 cups cooked shredded chicken (rotisserie works great)
  • 4 cups nacho cheese Doritos, crushed (divided)
  • 1 can (10.5 oz) cream of chicken soup
  • 1 cup sour cream
  • 1 can Rotel (diced tomatoes with green chilies), drained
  • 2 cups shredded cheddar cheese (divided)
  • 1 tablespoon taco seasoning
  • 1/2 small onion, finely chopped (optional)
  • Fresh cilantro or green onions (optional, for garnish)

Instructions

  1. Preheat oven to 350°F (175°C) and grease a 9×13-inch baking dish.
  2. In a large bowl, mix shredded chicken, cream of chicken soup, sour cream, drained Rotel, taco seasoning, chopped onion (if using), and 1 cup of cheddar cheese.
  3. Spread 2 cups of crushed Doritos on the bottom of the baking dish.
  4. Pour and spread the chicken mixture evenly over the Doritos layer.
  5. Top with the remaining crushed Doritos and the other 1 cup of cheddar cheese.
  6. Bake uncovered for 25–30 minutes until bubbly and cheese is melted.
  7. Let sit for a few minutes before serving. Garnish with cilantro or green onions if desired.

  • Swap chicken for ground beef or turkey for variation.
