Ingredients

  • For the carrot cake:
  • 3/4 cup all-purpose flour
  • 1 tsp baking powder
  • 1/2 tsp baking soda
  • 1/4 tsp salt
  • 1 tsp ground cinnamon
  • 1/4 tsp ground nutmeg (optional)
  • 3 large eggs
  • 1/2 cup granulated sugar
  • 1/4 cup brown sugar
  • 2 tbsp vegetable oil
  • 1 tsp vanilla extract
  • 1 1/2 cups freshly shredded carrots
  • For the cream cheese frosting:
  • 8 oz cream cheese, softened
  • 4 tbsp unsalted butter, softened
  • 1 cup powdered sugar
  • 1 tsp vanilla extract

Instructions

  1. Preheat oven to 350°F (175°C) and line a 10×15-inch jelly roll pan with parchment paper, leaving overhang on sides.
  2. In a bowl, whisk together flour, baking powder, baking soda, salt, cinnamon, and nutmeg.
  3. In a large bowl, beat eggs, granulated sugar, and brown sugar until light and frothy. Mix in oil and vanilla, then stir in shredded carrots.
  4. Fold in the dry ingredients until just combined. Spread the batter evenly into the prepared pan.
  5. Bake for 12–14 minutes, or until top is set and springs back when touched.
  6. Immediately turn the cake out onto a clean kitchen towel dusted with powdered sugar. Peel off parchment and roll up the cake with the towel. Cool completely.
  7. For the frosting, beat cream cheese and butter until smooth. Add powdered sugar and vanilla, and beat until fluffy.
  8. Unroll the cooled cake, spread the frosting evenly, then re-roll without the towel. Wrap in plastic and refrigerate at least 1 hour.
  9. Slice and serve chilled or at room temperature.
