Ingredients

  • 1 cup all-purpose flour
  • 1/4 cup brown sugar
  • 1/2 cup unsalted butter, melted
  • 1/4 teaspoon salt
  • 16 oz cream cheese, softened
  • 1/2 cup granulated sugar
  • 2 large eggs
  • 1 teaspoon vanilla extract
  • 1/4 cup sour cream
  • 1/2 cup caramel sauce (homemade or store-bought)

Instructions

  1. Preheat oven to 325°F (160°C). Line an 8×8 inch baking pan with parchment paper, leaving an overhang.
  2. Mix flour, brown sugar, melted butter, and salt in a bowl until crumbly.
  3. Press mixture evenly into the prepared pan to form a crust.
  4. Bake crust for 10 minutes until lightly golden. Remove and cool slightly.
  5. In a large bowl, beat cream cheese and granulated sugar until smooth.
  6. Add eggs one at a time, mixing well after each addition.
  7. Stir in vanilla extract and sour cream until combined.
  8. Pour cheesecake filling over the cooled crust and smooth the top.
  9. Bake for 30–35 minutes until edges are set and center is slightly jiggly.
  10. Cool completely at room temperature, then refrigerate for at least 2 hours.
  11. Before serving, drizzle caramel sauce generously over chilled bars.
  12. Use parchment overhang to lift bars, slice into squares, and serve.
