Ingredients

  • 1 pie crust (homemade or store-bought)
  • 1/2 cup unsalted butter
  • 1 cup brown sugar
  • 1/2 cup corn syrup or maple syrup
  • 3 large eggs
  • 1/2 cup heavy cream
  • 1 tsp vanilla extract
  • 1/4 tsp salt
  • 1 1/2 cups chopped pecans (toasted)

Instructions

  1. Preheat the oven to 350°F (175°C) and prepare the pie crust in a 9-inch pie dish, trimming and crimping the edges.
  2. In a saucepan, melt butter over medium heat, then stir in brown sugar and corn syrup until smooth and combined.
  3. Remove the mixture from heat and whisk in eggs, heavy cream, vanilla extract, and a pinch of salt until smooth and silky.
  4. Fold in most of the toasted pecans, saving some for topping.
  5. Pour the filling into the prepared pie crust and spread it evenly.
  6. Sprinkle the remaining pecans on top for a crunchy finish.
  7. Bake the pie for 45–50 minutes, or until the filling is set but still slightly jiggly in the center.
  8. Let the pie cool completely on a wire rack before serving to allow the filling to firm up.

Notes

  • For extra flavor, add a splash of bourbon or a pinch of cinnamon to the filling.
  • Swapping half of the pecans for walnuts adds texture variety.
  • Top with whipped cream or a drizzle of caramel sauce for added decadence.
  • Leftover pie can be stored in the fridge for up to 4 days, and it’s best served chilled or at room temperature. Warm briefly in the microwave for about 15 seconds if desired.
