Ingredients

1 baguette, sliced into 1-inch rounds

2 tablespoons olive oil (for brushing)

1 pint cherry tomatoes, halved

8 oz burrata cheese, torn into pieces

¼ cup fresh basil, torn

1 tablespoon balsamic glaze (optional)

Salt and pepper to taste

Instructions

Preheat oven to 375°F (190°C).

Place baguette slices on a baking sheet and brush both sides with olive oil.

Toast in the oven for 8–10 minutes, or until golden brown and crispy.

While bread is toasting, combine halved tomatoes, torn basil, salt, and pepper in a bowl. Toss gently.

Let toasted bread cool slightly.

Top each slice with tomato-basil mixture and a piece of burrata.

Drizzle with balsamic glaze if using. Serve immediately.

Notes

For extra flavor, add a splash of olive oil and lemon juice to the tomato mixture.

Substitute mozzarella for a more classic bruschetta if preferred.

Best served fresh to keep the bread crispy.
