Ingredients

  • 4 boneless, skinless chicken breasts
  • 1 cup fresh or frozen broccoli, chopped finely
  • 1 cup shredded cheddar cheese
  • 4 oz cream cheese, softened
  • 1/2 tsp garlic powder
  • 1/2 tsp onion powder
  • 1/2 tsp paprika
  • Salt and pepper to taste
  • 1 tbsp olive oil or melted butter
  • Toothpicks or kitchen twine

Instructions

  1. Preheat oven to 375°F (190°C) and lightly grease a baking dish.
  2. Steam or microwave broccoli until just tender, then chop finely.
  3. In a bowl, mix broccoli, cheddar cheese, cream cheese, garlic powder, onion powder, salt, and pepper until well combined.
  4. Cut a deep pocket into the side of each chicken breast without slicing all the way through.
  5. Stuff each pocket with the broccoli cheese mixture and secure with toothpicks if needed.
  6. Brush chicken with olive oil or butter and sprinkle with paprika, salt, and pepper.
  7. Bake for 25–30 minutes until chicken is cooked through and cheese is bubbling.
  8. Remove toothpicks, let rest a few minutes, and serve.
