Ingredients

  • 2 slices crusty bread (sourdough, ciabatta, or country loaf)
  • 23 oz Brie cheese, sliced (rind optional)

  • 12 tbsp balsamic vinegar (for reduction or use balsamic glaze)
  • 1 tbsp butter or olive oil (for grilling)

Instructions

  1. Make the balsamic reduction (if using): Simmer balsamic vinegar over medium-low heat until syrupy, about 5–7 minutes. Let cool slightly.
  2. Butter one side of each bread slice. On the unbuttered sides, layer Brie, blackberries, and a drizzle of balsamic reduction or glaze. Add honey or fig jam if using.
  3. Heat a skillet over medium heat. Place sandwich butter-side down, press gently, and cook 3–4 minutes until golden. Flip and cook the other side until cheese melts and bread is browned.
  4. Let rest 1 minute before slicing. Drizzle any extra balsamic and sprinkle herbs if desired. Serve warm.
