Ingredients

  • 1 lb ground beef (or ground turkey)
  • 1 small onion, finely chopped
  • 2 garlic cloves, minced
  • 2 cups enchilada sauce (red or green)
  • 1 tsp chili powder
  • 1/2 tsp ground cumin
  • 1/2 tsp paprika
  • Salt and black pepper to taste
  • 68 corn or flour tortillas
  • 2 cups shredded cheese blend (cheddar, Monterey Jack, or Mexican blend), plus extra for topping
  • Optional garnishes: sliced olives, chopped cilantro, diced onions, sour cream, avocado, lime wedges

Instructions

  1. Preheat oven to 375 °F (190 °C) and grease a baking dish.
  2. Heat oil in a skillet over medium heat. Sauté chopped onion for about 3 minutes until translucent. Add garlic and cook for 30 seconds.
  3. Add ground beef, chili powder, cumin, paprika, salt, and pepper. Cook until browned, then drain excess fat.
  4. Stir in half of the enchilada sauce and heat through.
  5. Warm tortillas until pliable. Fill each with the beef mixture, roll up, and place seam-side down in the baking dish.
  6. Pour the remaining enchilada sauce over the rolled tortillas and sprinkle generously with shredded cheese.
  7. Bake for 20–25 minutes until cheese is melted and bubbly.
  8. Let rest a few minutes before serving. Garnish as desired.
