Ingredients
1 ripe avocado
2–4 eggs (depending on serving size)
2 slices bread (sourdough, multigrain, or whole wheat)
1 tablespoon unsalted butter or olive oil
1 cup fresh fruit (berries, melon, citrus, or seasonal mix)
Salt and black pepper, to taste
Optional: squeeze of lemon juice, red pepper flakes, fresh herbs (chives or parsley)
Instructions
Toast the bread until golden and crisp. Brush with olive oil if desired.
Mash the avocado in a bowl; season with salt, pepper, and a squeeze of lemon if using.
Spread the seasoned avocado onto each piece of toast.
Melt butter (or heat oil) in a non-stick skillet over medium-low heat. Whisk eggs with salt and pepper.
Pour eggs into the skillet and gently stir and fold until softly set and creamy.
Remove the eggs just before fully set and spoon them over the avocado toast.
