This Apple Earthquake Cake is packed with cinnamon spice, juicy apples, and swirls of sweet cream cheese—soft, gooey, and bursting with fall flavor.
1 cup walnuts, roughly chopped
1 (15.25 oz) box yellow cake mix
1 cup water
1/2 cup vegetable or canola oil
3 eggs
1 1/2 teaspoons ground cinnamon
1/2 teaspoon ground cloves
1 ½ cups peeled and diced apple
Cream Cheese Layer:
1 (8 oz) package cream cheese, softened
1/2 cup butter, softened
1 teaspoon vanilla extract
2 cups powdered sugar
Preheat oven to 350°F (175°C). Lightly grease a 9×13-inch baking dish.
Sprinkle walnuts evenly across the bottom of the prepared dish.
Prepare cake batter: In a large mixing bowl, combine cake mix, water, oil, eggs, cinnamon, and cloves until smooth. Fold in diced apples.
Pour batter over the walnuts in the pan.
Make cream cheese mixture: In a separate bowl, beat cream cheese, butter, and vanilla until smooth. Mix in powdered sugar until fully combined.
Add cream cheese layer: Spoon dollops of the cream cheese mixture over the cake batter. Lightly swirl with a knife or spatula—do not overmix.
Bake for 45–50 minutes, or until a toothpick inserted in the center comes out clean.
Cool for at least 30 minutes before slicing and serving.
You can substitute pecans for walnuts if preferred.
For extra apple flavor, add 1/4 teaspoon of nutmeg or use a spice cake mix.
Best served slightly warm or at room temperature.
Store leftovers covered in the refrigerator for up to 3 days.
