Ingredients

  • 1 lb ground beef
  • 1 onion, chopped
  • 2 cloves garlic, minced
  • 12 oz egg noodles or wide pasta
  • 2 cups tomato sauce or crushed tomatoes
  • 2 tbsp tomato paste (optional)
  • 1 cup cottage cheese
  • 1/2 cup sour cream
  • 2 cups shredded cheddar or mozzarella cheese
  • 1 tsp salt
  • 1/2 tsp black pepper
  • 1 tsp dried parsley or Italian seasoning
  • 1 tbsp butter (for greasing the dish)

Instructions

  1. Preheat oven to 350°F (175°C) and butter a large baking dish.
  2. In a skillet, brown ground beef with onion and garlic. Drain grease and stir in tomato sauce and tomato paste (if using). Season with salt, pepper, and herbs. Simmer for 10 minutes.
  3. Cook noodles until al dente, then drain.
  4. In a bowl, mix cottage cheese, sour cream, and a pinch of seasoning.
  5. Layer half of the noodles in the baking dish, followed by half the cottage cheese mixture, and half the meat sauce. Repeat the layers and top with shredded cheese.
  6. Cover with foil and bake for 25 minutes. Uncover and bake for 10–15 more minutes until bubbly and golden.
  7. Let rest for 5 minutes before serving.

Notes

  • Swap ground beef for turkey or sausage.
  • Add chopped spinach or mushrooms to the meat sauce for extra veggies.
  • Use ricotta instead of cottage cheese for a smoother filling.
  • Mix cheeses like mozzarella and parmesan for a melty top.
  • Freeze before or after baking for easy make-ahead meals.
