Ingredients

  • 2 large sweet onions (Vidalia or Walla Walla), thinly sliced
  • 1/2 cup all-purpose flour
  • 1/4 cup cornmeal
  • 1 tsp baking powder
  • 1 tsp salt
  • 1/4 tsp black pepper
  • 1 tsp sugar
  • 1/4 cup milk
  • 1/4 cup water
  • Vegetable oil for frying (about 1/2 inch deep)

Instructions

  1. Slice onions thin and separate into strands.
  2. In a bowl, whisk together flour, cornmeal, baking powder, salt, pepper, and sugar.
  3. Stir in milk and water until a thick batter forms. Fold in onions until coated.
  4. Heat oil in skillet over medium heat until about 350°F.
  5. Drop spoonfuls of batter into oil and gently flatten each with the back of a spoon.
  6. Fry for 2–3 minutes per side until golden and crispy.
  7. Transfer fritters to a paper towel–lined plate to drain.
  8. Serve warm with ranch, sour cream, or spicy mayo if desired.

Notes

  • Sweet onions like Vidalia bring the best flavor, but yellow onions can be used too.
  • Add a pinch of paprika or cayenne for a spicy kick.
  • Stir in chopped chives, parsley, or shredded cheddar for variation.
