Ingredients

Instructions

  1. In a medium bowl, whisk together egg yolk, minced garlic, lemon juice, Dijon mustard (if using), and salt until smooth.
  2. Start adding the neutral oil a few drops at a time while whisking constantly to begin the emulsion.
  3. As the mixture thickens, slowly drizzle in the remaining oil in a steady stream, alternating with olive oil, while whisking vigorously.
  4. Continue whisking until the aioli becomes thick and creamy.
  5. Taste and adjust seasoning with more salt or lemon juice if needed.
