Ingredients

1 1/2 pounds ground beef (80/20 for best flavor)
2 large yellow onions, thinly sliced
8 slices sturdy sandwich bread or Texas toast
8 slices Swiss cheese (or preferred melty cheese)
6 tablespoons salted butter, softened and divided

Instructions

Shape the patties
Divide the ground beef into 4 equal portions. Shape into thin oval patties matching the size of your bread. Season lightly with salt and pepper if desired.
Cook the onions
Heat 2 tablespoons butter in a large skillet over medium heat. Add sliced onions with a pinch of salt. Cook for 12–15 minutes, stirring often, until soft and golden. Remove and set aside.
Cook the patties
In the same skillet, increase heat to medium-high. Cook patties for 3–4 minutes per side until browned with crispy edges. Remove and reduce heat to medium-low.
Butter the bread
Spread remaining butter on one side of each bread slice, covering fully to the edges.
Assemble the sandwiches
Place 4 slices of bread butter-side down in the skillet. Layer each with cheese, caramelized onions, a beef patty, another slice of cheese, then top with bread (butter-side up).
Grill the patty melts
Cook over medium-low heat for 3–4 minutes per side, pressing gently, until golden brown and cheese is melted.
Serve
Let rest 1–2 minutes, slice, and serve hot.

Notes

Cooking everything in one pan enhances the flavor by layering buttery and beefy richness.
Keep heat moderate to avoid burning the bread before the cheese melts.
Let sandwiches rest briefly to help the cheese set slightly before slicing.
