Slice the zucchini in half lengthwise and place in a baking dish cut side up.
Drizzle with olive oil and sprinkle with salt. Place in oven for about 20-25 minutes until the fleshy part of the squash is soft.
Scoop out the fleshy part of the squash and place into a blender or use your Nutribullet.
Take the pureed squash and mix this with the spaghetti sauce.
Place the cooked spaghetti in the zuchinni boats and then pour the sauce overtop. Sprinkle with cheese (if using) and then place back into oven for about 10 minutes more. NOTE: Now if you are preparing this ahead of time, this is where you DON'T put it back into the oven. You'll allow the boat to cool off, cover and place in the refrigerator (will keep for 2-3 days). When ready to serve, you'll put into the oven for about 20-30 minutes (long enough to warm it all back up again).
When serving at the table, you'll slice the boat and watch it get gobbled up by all the sharks at the table!!
