1 Large yellow or white onion (cut into 1 - 2 inch pieces)
2 red or green bell pepper (cut into 1 - 2 inch pieces)
2 Small zucchini (sliced thickly into rounds)
2 Small yellow crookneck squash (sliced thickly into rounds)
1/2 cup olive oil
1/2 cup tamari sauce
1/3 cup balsamic vinegar
4 cloves garlic (crushed)
1 teaspoon dried oregano
1/2 teaspoon black pepper
Preheat the oven to 400 degrees F.
Alternate the veggies onto the wooden skewers and then place into a deep baking dish in one layer. (Don't worry -- if you don't have skewers just put all the veggies in a single layer on a large baking dish and continue).
Mix all the rest of the ingredients and then drizzle this onto the veggies.
Place in the oven and bake for 10-20 minutes until the veggies are slightly softer but still crisp. This can be served over rice or as side dish.
