1 can crushed pineapple (15oz can in it's own juice)
2 apples (peeled, chopped)
1/2 cup water
1/2 juice from 1/2 lime
1/4 cup vodka (optional)
Cranberries are packed with Vitamin C -- a natural antioxidant. The high amounts of Vitamins E, C, and K in cranberries also boost the body's immune system, offer anti-inflammatory help to the body, and have cancer-preventing properties. Cranberries have a lot of fiber too.
Cranberries are a wonderful side dish for holiday tables, but try adding them to muffins, pies, and salads on a regular basis so you get their health benefits year round.
Mix all the ingredients except the vodka (if using) in a medium pot. Cook uncovered on medium heat until the liquid boils. Cook, stirring occasionally, until almost all the liquid is boiled off and the cranberries have all burst open (about 10-15 minutes).
Remove from heat and stir in the vodka (if using). Place in a serving dish, cool and refrigerate until chilled.
