1/2 cup zucchini or yellow squash (sliced and then halved)
1/2 cup red bell pepper (chopped)
1 tablespoon cilantro (chopped)
1/2 cup yellow bell pepper (thin slices)
2 servings of rice noodles (prepared per instructions on packaging)
1/2 cup shelled, raw, unsalted peanuts

Stir fry recipes always look daunting to me....don't worry. There are a few more ingredients than our receipes usually have, but most of it's vegetables that you chop up ahead of cooking time. Once everything's chopped up, then the cooking it up part is really fast. You're gonna love it!!
Follow the package directions and cook the rice noodles.
Heat the oil in a wok or large deep skillet over medium-high heat.
Add the chilies, garlic, and ginger and stir constantly for about 1 minute (enjoy that aroma!)
Add the red bell peppers and onions. Cook, stirring for about 1 minute more. Then add all the other vegetables (including the cilantro) and the shrimp. Continue to stir and cook until the shrimp is fully cooked.
Then, add the cooked rice noodles, drizzle with tamari sauce and sesame oil, add in the peanuts, and cook for another 30 seconds. Remove from heat. Enjoy!
