1lb boneless pork shoulder (cut into 1 inch pieces)
1 teaspoon salt
1 teaspoon pepper
1/2 teaspoon cumin
1/2 Small white onion (chopped)
When looking for pork to use for this recipe, you'll want to find meat from a farm-raised, free-range, happy pig that was not given antibiotics, not given hormones, and fed it's natural diet. Your body will benefit from this healthier meat. For more information on this topic, go to our blog post "Why Pay the Price for Free Range Animal Products?"
In a medium heavy cooking pot or Dutch oven put the pork pieces and just enough water to cover the pork. Cover and bring to a simmer over medium-high heat. Stir occasionally until the water evaporates (about 30 minutes). Season with salt, pepper, and cumin and add the onions to the pot. Now fry the meat and the onions until browned and crispy (about 10 minutes).
Serve as the meat for tacos or on top of a taco salad.
