You can add in 1 tablespoon of chia seeds or flax seeds in the batter to add a little extra nutrition and crunchiness. Serve with sliced strawberries, blueberries, walnuts, and a little drizzle of maple syrup.
In a bowl beat the egg. Then, add the sugar, salt, milk, and oil and mix.
Add the flour, baking powder, xanthan gum and mix just until smooth.
Heat a griddle, add a little olive oil to the pan and then pour about 1-2 tablespoons of the batter to the pan. Cook until browned and then flip to cook the other side. Transfer to a plate to either serve or to cool for freezing.
If freezing, allow to cool completely and then freeze with wax paper or parchment paper between pancakes. When ready to eat, take the frozen pancake and place in a toaster oven or on a baking sheet in the oven at 350 degrees F and bake for 3-5 minutes until warmed.
