2-4 tablespoons butter (you can use ghee or avocado oil (if you're dairy free) if you wish)
1/3 cup white wine
1 Large lemon (squeezed)
1 tablespoon fresh dill (chopped)
Wild caught fish is always the most healthy fish to eat.
Also be sure to use organic butter and non-GMO corn grits.
We actually had a tasting contest between frying the fish in avocado oil and ghee (clarified butter). The ghee won 4 to 0!
Sprinkle fish with salt and pepper.
Mix flour and grits together on a large plate.
Place fish onto flour mixture and coat both sides. Then put floured fish onto another plate.
Heat 1/2 the butter (ghee or oil) in a large frying pan over medium-high heat. Add the flour coated fish and fry until crispy brown. Flip over and cook until browned. Place the cooked fish on a serving plate. Repeat with the rest of the fish (adding more butter or oil as needed to the pan).
When done frying up the fish, add the wine to the frying pan and cook for 2 minutes stirring often. Turn the heat off, pour in the lemon juice and stir.
Pour wine/lemon juice over fish and sprinkle with fresh dill. Enjoy!
