1 cup leftover veggies like peppers, carrots, celery (chopped)
1/2 cup onion (whatever kind you have) (chopped)
1 can organic diced tomatoes (add juice and all from the can)
1 teaspoon dried oregano
1 teaspoon sea salt
1/2 teaspoon black pepper
2 cloves garlic (minced)
If you are using canned beans, then no need to soak, just rinse well and put into the crockpot. If using bagged beans or beans from bulk containers, then you'll need to soak overnight and rinse well before putting into crockpot.
Serve this hearty bowl with a green salad and some fresh bread or homemade tortillas. Yum! I love walking in the door and dinner is ready to eat. Oh the joy of an easy, hearty, homecooked meal. It makes me feel like a superstar mom and wonderous wife!
Rinse the beans well.
Put all the ingredients into your crockpot and turn on low. Cook for 8-12 hrs and dinner is ready when you walk in the door at night. Just smell the goodness.
