2 cooked chicken breast - chopped (prepared following the Moist Stove-top Chicken Breast recipe)
2 avocado (smashed until smooth)
2 tablespoons cilantro (chopped)
1 cup mixed lettuce (shredded)
4 Large gluten-free wrap
Lay out flat a gluten free wrap.
Smear the avocado all over the wrap.
Sprinkle the cilantro and the lettuce all over the avocado.
Then, place the chunks of cooked chicken down the middle of the wrap.
Starting at one end, roll the wrap tightly from one end to the other. Then, using a sharp knife, cut the wrap at a diagonal. You can have this whole wrap for a filling lunch or share half of it and serve with a cup of soup.
