4 Small chicken breasts (pounded to equal thickness and then cut into 1 1/2 inch chunks)
1/2 teaspoon salt
1/2 teaspoon black pepper
2 egg (beaten)
2 cups corn grits (non-GMO corn)
1 teaspoon paprika
1/2 teaspoon garlic powder
1 cup olive oil or avocado oil
Heat half the oil in a frying pan on medium-high.
Mix the corn grits and all the spices together on a plate.
Beat the egg in a small bowl.
Take a chunk of chicken, dip it into the egg, then coat by rolling in the corn grit mixture.
Then, fry several pieces of the coated chicken in the oil until browned on both sides. About 5 minutes or until the inside is no longer pink.
Put the cooked chicken on a papertowl to drain while you are cooking the next batch of chicken. Add more oil as needed to the pan.
