1lb flank steak (grass fed beef) (thinly sliced against the grain)
2 tablespoons olive oil or avocado oil
1/4lb snow peas
It can be confusing when you read meat labels at the grocery store. You are looking for organic, grassfed, free-range, hormone-free, antibiotic-free meats. Grassfed meat is lower in overall fat and saturated fat compared to cornfed beef. Grassfed beef also has almost double the amount of healthy Omega 3 fatty acids compared to cornfed beef. It's worth the extra cost at the grocery store to get grass fed beef -- it will save you in ill health later on.
Combine tamari sauce, vinegar, water and sugar in a large bowl. Add meat, stirring to coat, set aside.
Heat 2 Tbsp oil in wok or large skillet over high heat. Add snow peas to wok and stir fry 1 minute. Remove to plate.
Add beef mixture and stir fry until meat loses its red color.
Then return snow peas to wok and heat gently. Serve over brown rice or quinoa.
